I know it has been a while since my last blog post. I have so much to share, but for now, I will go ahead and share my latest recipe.
I have recently grown fond of mushrooms, and I decided to make a stirfry yesterday with mushrooms as the main protein. It was delicious! Check out the recipe below and let me know what you think. Feel free to modify it with your favorite veggies and mushrooms, and drop your creations below.
Ingredients in Stirfry
- Lion’s mane mushrooms
- Shiitake mushrooms
- Purple cabbage
- Bell peppers
- Broccolini
- Snow peas
- Garlic
- Green onions (for garnish)
- Alfalfa and radish sprouts
- Sauce of choice (I created my own spicy teriyaki style sauce)
- Molasses
- Ketchup
- BBQ sauce
- Water
- Honey
- Chili pepper seasoning
- Hot sauce
Prepping Your Meal
Chop up all the veggies, except for the green onions, into smaller bits and pieces and set aside. Cut up the shiitake mushrooms into thin pieces, and break down the lion’s mane mushrooms by hand into smaller pieces, and set aside.
Chop up the green part of the green onions and set aside, as these will be used for garnish.
Chop up garlic and the white part of the green onion and set aside.
Cooking Your Meal
Put your oil or butter in the pan and turn it up to medium-high heat. Once warmed up, add your garlic and onions. Allow that to soften before adding in all the other vegetables. Do not add the mushrooms until the vegetables are softer, so that the mushrooms are not soggy or overcooked.
Once the veggies are soft, add your mushrooms and let that cook a little bit longer.
Once you can see the heat and steam coming through, add your sauce and mix thoroughly.
Ingredients in Fried Rice
- White rice
- Eggs
- White onion
- Green onion
- Olive oil/butter
- Sesame seeds
- Soy sauce
Prepping Your Meal
Chop up the white onion into small pieces and set aside. Crack two eggs in a bowl and mix eggs until eggs white and yolk are fully mixed.
Chop up green onions and set aside, as these will be used for garnish.
If you have day-old or cold rice, that will be the best rice to use, so that it does not become soggy. If you do not have day old rice, make some rice and then refrigerate before using.
Cooking Your Meal
Turn your pan on medium-high heat. Pour your oil or butter into the pan and let it heat up. Once hot, add the onions and let them cook for a couple of minutes. Add the beaten eggs onto the other side and mix up until mildly cooked. Mix the onions and eggs together and break up the egg into smaller pieces.
Once cooked through, add your rice and combine it with the onion and egg mixture. Mix it up and add your soy sauce on top. Mix until you see heat/steam coming through the mixture.
Enjoying Your Meal
Serve in a bowl, add your stir fry mixture, and garnish with sesame seeds and green onions, and enjoy!
I also love to eat my stirfry with some seaweed, for a little extra flavor.
